A quick, high-protein breakfast you’ll actually look forward to

Mornings can be a little hectic, right?

🍋 Lemon Blueberry Protein Muffins
Makes 12 muffins
Ingredients:
- 2 cups almond flour
- ½ cup vanilla protein powder (use your favorite kind)
- 1 tsp baking soda
- ½ tsp salt
- Zest of 1 lemon
- 3 eggs
- ¼ cup honey or maple syrup
- ⅓ cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
Directions:
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, whisk together almond flour, protein powder, baking soda, salt, and lemon zest.
- In another bowl, mix eggs, honey (or maple syrup), applesauce, and vanilla.
- Combine wet and dry ingredients, stirring until just mixed. Fold in the blueberries.
- Divide the batter evenly into the muffin cups.
- Bake for 18–22 minutes, or until a toothpick comes out clean.
- Let them cool slightly—and then enjoy!
Storage Tip:
Store in the fridge for up to 5 days or pop them in the freezer for an easy grab-and-go option during the week.
