Summer is often the time of year I find it most difficult to hit protein goals due to hot temperatures and the lack of desire to cook! I’d be happy to eat watermelon and smoothies for every meal until the cooler fall months but we’ve got goals to hit so we’ve got to be creative!
Enter my new favorite recipe cottage cheese avocado toast. Packed full of protein, healthy fats, carbs and produce this recipe hits all the marks! The veggie options are interchangeable and I like to switch my options up week to week depending on what looks good at the grocery store. Beets, zucchini, yellow squash, and arugula are all excellent toppings as well.

Recipe:
Toast 2 slices sourdough bread. Spread 1/4 avocado on each piece. Top with 1/2 cup cottage cheese on each piece. Layer sliced veggies evenly on top followed by a sprinkle of cojita cheese sea salt, pepper, and optional balsamic vinegar. This is an excellent post workout snack or even full on meal!

2 slices sourdough bread
1/2 cup diced cherry tomatoes
2 tbsp cojita cheese
1 cup cottage cheese
1/2 avocado
1/2 thinly sliced green bell pepper
1/2 thinly sliced cucumber
salt
pepper
balsamic vinegar
