Let’s talk swaps for a minute! I love sweets but know they don’t always make me feel my best- but hey, who said sweets have to be made from highly processed/sugary ingredients?! It’s all in the ingredient swap. The other day a chocolate muffin sounded tasty and with a few small tweaks I came up with something full of powerful ingredients that not only tasted amazing, but left me feeling full of energy!
It first started with a few swaps. I substituted regular flour with oat flour, sugar for honey, and oil for bananas. I used Bob’s Red Mill oat flour but you can easily grind up some oats you have in your pantry.
1 Cup Peanut Butter (you could use any nut butter here)
1/4 Cup Honey
2 tsp Baking Powder
6 Dates
1/2 Cup Oat Flour
1 tsp Vanilla
2 Mashed Bananas
1/2 Cup Unsweetened Cocoa Powder
2 tsp cinnamon
1tsp Himalayan salt
I didn’t want there to be chunks of dates in the muffins so I mixed everything in a food processor for about 30 seconds. Looked like chocolate muffin batter!
Bake in a 350 degree oven for 15 minutes and voila! Perfect for an on the go breakfast or late night snack, these muffins are sure to satisfy any sugar craving!!
